In the US, we’re crazy about smoked salmon. Although you can get it down here in Costa Rica, the natural substitute is smoked trout, which is local and every bit as flavorful and delicious…in fact it’s my new favorite! 
Breakfast in solitude at my favorite morning meal spot on the Baru River in Dominical, Cafe Mono Congo — sourdough toast with cream cheese, smoked trout, fried capers, pickled onions, and lemon juice with a side of avocado. And a dirty chai with oat milk.
Life just doesn’t get any better than this. ❤️
